As a regular guest of the luxurious Park Hyatt Zurich, I’m always interested in what is cooking in the award-winning parkhuus restaurant kitchen – and not just because the food is delicious. It’s Executive Chef Frank Widmer’s innovative approach that appeals to me. A few years ago, it was the delicious and healthful Beauty, Brain, and Mood Food menu. Today it is something new and exciting.
New Culinary Concept parkhuus restaurant
Working with Chef de Cuisine Sebastian Wirsching and Restaurant Manager Armin Waldvogel, Frank Widmer recently launched a menu based on locally-sourced food. Through partnerships with Swiss hunters, fishers, and farmers, the trio sources the best ingredients for use in the Park Hyatt Zurich parkhuus restaurant kitchen.
Switzerland has one of the most pristine environments in the world according to the Environmental Performance Index. With over 100 large lakes (and thousands of smaller ones), dense forests, and sprawling pastures, product quality is already high. But the parkhuus restaurant team take it to another level. The parkhuus restaurant’s partners must share the hotel’s philosophy of sustainability and respect for the environment and its creatures. Dining at the Park Hyatt Zurich parkhuus restaurant is an opportunity to take an exceptional culinary journey, tasting food prepared using Switzerland’s finest products.
To start, choose from curated menu items like alp trout from San Bernardino served on Lake Zurich stones, buffalo mozzarella with melted tomatoes and homemade pesto, air-dried meat (prepared by the in-house butcher) served with sour-marinated cucumber, or gazpacho prepared using Swiss seasonal vegetables.

Tantalizing entrees include meat and fish dishes from throughout Switzerland, as well as vegetarian items.
Desserts are the grande finale. Tempting menu items include Swiss whiskey with strawberries, Swiss elderflower – a small creme brulee with sherbert elderflower jelly and meringue, and an unforgettable chocolate dessert known as “maracaibo” served on a bed of Swiss strawberries.

Accompanying drinks enhance the best of Switzerland culinary experience. Order the tales of parkhuus cocktail, made with award-winning Morris Gin from Switzerland, a glass of Helveticus Brut Blanc de Blancs, or one of many excellent Swiss wines.

Children don’t take a back seat on the tasting tour of Switzerland. Kids can order from an interesting children’s menu and supplement their meal with items including photo-worthy hand cut french fries, young Swiss potatoes, or tender sautéed carrots.
